<tr><td class="tr-caption" style="text-align: center;">Carob Brownie</td></tr>
</tbody></table>
These brownies are candida detox friendly. I have been really missing chocolate and while this really isn't chocolate it does help curve those "dessert" cravings.<br />
<br />
You will need:<br />
4 egg whites, whipped<br />
1/2 cup stevia<br />
1 tablespoon vanilla extract<br />
1/2 cup carob powder<br />
1/2 teaspoon baking powder<br />
1/4 teaspoon salt<br />
1/2 cup whole wheat flour (if you are going gluten free try any legal flour such as almond or buckwheat)<br />
shredded coconut (optional)<br />
<br />
Preheat oven at 325 degrees F. Prepare a small baking pan by rubbing it with butter and then a thin layer of your flour.<br />
<br />
In a mixing bowl, combine baking powder, carob powder, salt and flour.<br />
In another mixing bowl, combine egg whites, stevia, and vanilla extract.<br />
Mix dry ingredients with wet ingredients, bake for 18 minutes.<br />
<br />
While it bakes it looks a little funny. This is a picture of it fully baked.<br />
I use a plastic knife when cutting brownies to keep it from bunching, but I don't think you will have that problem with this batch. Enjoy!<br />

This is a big step for me being a picky eater as it caused me step out of my comfort zone of warm breads and cheesy pastas while clinging to the greenness that I have despised for so many years. I won't say that it is not challenging or that it is even easy, but after the first week and half was over I felt like it was so much easier and now I feel absolutely fantastic! </span><br />
<br />
<span style="font-family: Arial, Helvetica, sans-serif;"><b><span style="font-size: large;">First, what is candida</span></b>? </span>"<span style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px;">Candida is an over-infestation of yeast in the body. It can invade the brain and every tissue of the body, and it grows and lives on what you eat. It makes your body crave what it needs to grow, and rampages until you eat it. Many medications, such as steroid drugs, birth control pills, and antibiotics can increase the likelihood of a candida yeast imbalance.</span><br />
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
Symptoms include frequent yeast, bladder or skin infections, chronic fungus such as athletes foot or thrush, allergic reaction or increased sensitivities to foods or chemicals, bowel disorders, muscle pain or weakness, and fatigue."<span style="font-size: 12px;"> (M'lis website) </span></div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
To read more about what candida is click <a href="http://www.mlis.com/candida-1000329" target="_blank">here</a></div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
<b><span style="font-size: large;">Why</span></b> would I do something like this? I decided to go on this detox after several months of not being able to escape my sugar cravings. I felt like it was consuming me and that I would eventually turn into a big cake pop! A company of all natural products that I use in my massage therapy office offers a plan to eliminate candida from the body. The plan consists of 30-60 days (depending on how bad your candida is) of a strict meal plan. Through out the plan you eliminate red meat, dairy, fruit, refined sugars and flours while eating whole grains, veggies and lean proteins such as fish or poultry. This is the plan because yeast feeds off of all sugar. Ask yourself: When was the last meal that you ate where there was no sugar in it at all? Sugar is in everything. Every processed food. All the name brands that you love add it so that you will love their product. We are addicted. I like to think of sugar as a serious drug and that this plan is my true detox from it. </div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
<b><span style="font-size: large;">The plan</span></b> of his detox is to starve out the yeast from the body and candida is a living organism that will fight to survive. The plan consists of all natural herbal supplementation:<br />
-<a href="https://squareup.com/market/amber-sweaza-lmt/m-lis-detoxification-kit" target="_blank">Fiber</a><br />
-<a href="https://squareup.com/market/amber-sweaza-lmt/m-lis-detoxification-kit" target="_blank">Cleanse</a><br />
-<a href="https://squareup.com/market/amber-sweaza-lmt/m-lis-detoxification-kit" target="_blank">Detox</a><br />
-<a href="https://squareup.com/market/amber-sweaza-lmt/probiotic" target="_blank">Probiotic</a><br />
and 3 detoxifying liquid days on day 9 through 11. On all other days you can eat veggies, whole grains and lean protein. You do 3 more detox liquid days to finish your program out, so if you are doing 30 days you repeat the liquid on days 28-30. On the liquid only days you drink a lemonade mixture containing fresh lemon juice, pure maple syrup and distilled water while taking the herbal supplements. This is not to be confused with the "master cleanse" This is not the same thing at all. </div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
<b><span style="font-size: large;">During</span></b> this detoxification process the body may go through what is called a "healing crisis". The consumption of caffeine, refined sugar, alcohol and other substances contribute this effect. During the first 2 weeks I could actually feel my candida or what I like to call my "sugar monster" trying to survive. During detoxification and the days following, many people experience some of the signs of a healing crisis, which may include: headaches, skin breakouts, bowel sluggishness, diarrhea, fatigue, sweating frequent urination, congestion, nasal discharge, or body aches. Some also briefly experience anxiety, irritability or mental depression. If these temporary symptoms are experienced it is a POSITIVE thing! I can honestly say that my worse symptom was one day of nausea and not wanting to eat anything on the allowed plan. It was really not bad at all. This means that the candida is fighting to survive and is dying off. It is very important to drink plenty of water to flush out the toxins from the system and get plenty of rest. </div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
<b><span style="font-size: large;">Results</span></b> are absolutely astounding! As the body goes through this detox it will feel better. Fatigue, mental sluggishness, sugar cravings and crashing will be minimal or eliminated by the end and the body's over all well- being is enhanced. Think of detoxification as a gift to your hard working, abused body. In all honesty I did not expect to see the results that I have received. Some of the differences I have seen are the following: I use to be very sensitive to toxic aroma like hairspray or strong perfume and especially cigarettes. I still do not like to be around cigarettes but I no longer get a headache when I am around these things. I lost 7lbs! I did not plan to loose much weight but 7lbs is quite a bit for me because I am a tiny person. I weigh less now then I have for the past 9 years! I do not crave sugar like I use to and when I am around junk food such as high calorie chips, processed cheese and freezer foods I now think that they sound discussing and couldn't imagine putting that in my body. Before I went on this program every time I ate I would fight a mucus build up in my throat. (I know that is gross, sorry!) Now I do not have that. On top of all of that I have so much more energy and clearer skin. Bonus!! These are just a few of the benefits I have seen. </div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
I think it is important for all of us to look at our diet and listen to our bodies. What are you craving? How do you feel? We control our bodies...not our food. </div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
<br /></div>
<div style="color: #252525; font-family: Arial, Helvetica, sans-serif; line-height: 20px; margin-bottom: 1em; padding: 0px; vertical-align: top;">
If you have any questions or would like to know more about this detox you can contact me and I would be happy to talk with you about it. </div>

</tbody></table>
I have a big heart for small local businesses. Perhaps that is why Anna Maria is my favorite beach as it is surrounded by artsy mom and pop shops and lacks any large and obnoxious hotels or chain restaurants. We went on a day beach trip this last weekend and found ourselves attracted to this little joint for lunch. Right down the street from the City Pier a small sign by the road caught our eye reading: Tacos, Burritos and Quesadillas. What more could you ask for?<br />
<div>
<br /></div>
<div>
Poppo's is very much like Chipotle in it's layout and serving style but it definitely trumps the popular chain in food quality and creative selection. All produce is organic when available and all meat is hormone & antibiotic free. They also have gluten-free options.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhE2lFSZ2a6t88DzUdqMAbrNp_ZHgHC_IyDHYtoY5ubjaYr7Ov4bn2TldEpVuwU5dbHZpdfg_iKLvSejo5QVkLjoXXlmxpwsFigII6baveVfMGmd8Fo1L1d2AReSUv4V04BJEDHpJlfK9E/s1600/IMG_3561.jpg" imageanchor="1" style="clear: right; float: right; margin-bottom: 1em; margin-left: 1em;"><img border="0" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhE2lFSZ2a6t88DzUdqMAbrNp_ZHgHC_IyDHYtoY5ubjaYr7Ov4bn2TldEpVuwU5dbHZpdfg_iKLvSejo5QVkLjoXXlmxpwsFigII6baveVfMGmd8Fo1L1d2AReSUv4V04BJEDHpJlfK9E/s320/IMG_3561.jpg" width="240" /></a></div>
<br />
To order you choose your style of preparation and follow the bar as you build your order by request. Styles include:<br />
2 Tacos-$7<br />
Burrito- $7.95<br />
Cheese Quesadilla- $3<br />
Loaded Quesadilla-$5<br />
Plate-$8.95 (This is your choice of toppings on a bed of their Honey Lime Slaw- my husband fell in love with the slaw.)<br />
<br />
I recommend ordering the tacos with shredded chicken and a side of Chips and Guacamole. The chips are flour tortillas chopped and fried fresh to order. It was truly amazing!<br />
The food is a little bit more expensive than you would expect for quick service. My husband and I spent $25 on our meal. I would gladly pay it again for the food quality that we received.<br />
<br />
Another quirky difference that makes this taqueria stand out among the others are their beverages.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgVYOazpyriJACDNzPBP4d13RcAJjvr1kSsgNCIyqYLTuDoGCSJ-LlBQZfkH4igOFAK3MS8e1HGnroji5pj-BQciDd9o143uXlPWN6mz3Cfov8OnwY4lnW4-BnHD8xQJun7zJ3y11ZiuLQ/s1600/IMG_3560.JPG" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgVYOazpyriJACDNzPBP4d13RcAJjvr1kSsgNCIyqYLTuDoGCSJ-LlBQZfkH4igOFAK3MS8e1HGnroji5pj-BQciDd9o143uXlPWN6mz3Cfov8OnwY4lnW4-BnHD8xQJun7zJ3y11ZiuLQ/s320/IMG_3560.JPG" width="320" /></a></div>
All sodas are high fructose corn syrup free! Fountain drinks are $1.65 and come with free refills. There are also bottled sodas and I opted to try Virgil's Root Beer. I believe I have found a new favorite.<br />
<br />
The majority of the seating is outside but there is a bar that seats 7 people inside. Pappo's is open 11am-9pm daily but are closed on Tuesdays.<br />
<br />
I highly recommend this quick service gem. My husband and I have both been craving it every day since we left the beach. I believe we will have to make another beach trip very soon.<br />
Enjoy!<br />

<u><b><span style="font-size: x-large;">Picky Eating Is A Mental Illness</span></b></u></div>
<div style="text-align: center;">
<u><b><span style="font-size: x-large;"><br /></span></b></u></div>
<div style="text-align: left;">
For the majority of my childhood and my entire adult life I have struggled with a pretty serious case of finicky eating. I have always been able to admit it, in fact on most occasions I would happily announce my preferences in fear of being forced to try something out of my comfort zone. I write this blog now in hopes that someone like me will find encouragement. </div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
The truth is picky eating has now been given an official name: Selective Eating Disorder. It may not be in the Diagnostic and Statistical Manual of Mental Disorders but I personally agree that picky eating steams from some type of mental trauma in a person's life. It can vary in all ages and I like how Wikipedia put it - "<span style="background-color: white; font-family: sans-serif; font-size: 13px; line-height: 19px;">Selective eating should not be of a concern as long as there are no negative effects on social, physical and emotional development." </span></div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
I laughed out loud when I read that sentence. How many picky eaters are not affected <u>socially</u> when everyone wants to go to a restaurant and that person knows that there is nothing he or she will eat there? (For me it is any type of sandwich shop...even to this day) What about when picky Joe is at a party and the only thing there is to eat is something he is afraid of? How many picky eaters are not affected <u>physically</u> because all they want are the same things over and over again causing malnutrition, weight gain and possibly health problems? What about the <u>emotional </u>trauma of realizing that you are not like everyone else and it takes some explaining before you even have dinner with new friends?</div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
I want to share my background so that you might better understand my personal break through. When I was in third grade our teacher made us watch a video about choking and how to preform the heimlich maneuver. There was one part in the video in particular that really got to me. It explained what to do if you were choking and completely alone. The video then showed a man thrusting himself onto the edge of a table to dislodge a piece of hot dog. I remember thinking "What if I am not strong enough to do that?" </div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
This prompted a rebellion towards food. Not only did I become a picky eater for life, but initially I wouldn't eat anything at all! I slowly became hungry enough to drink the broth from ramen noodle soup, leaving behind the noodles. I remember my family being worried and saying things to me like "You know if you don't eat you will die!" I think a lot of parents might blame themselves if they found they have raised a picky eater, but I truly do not blame mine. In fact, I clearly remember my mother trying to force me to eat steak and I would feed it to my cat when she was not looking. As time went on I began eating breads and sweet treats while despising all things green and most proteins. I found it easier to say no to certain foods, and my family was just happy I was eating. I did find flinstones vitamins in my lunch box every day from my still-concerned mother. </div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
I did not grow out of it. Instead I found it easy to fall into a repetitive routine of eating the same things over and over. Pasta became my only food group and my friends (and even their parents) became accustomed to my habits and accommodated me. </div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
It is not until now, almost in my thirties, that I have had a desire to break the old habits and try to regain the nutrition I lacked all those years. It is a daily conscious effort I must force myself to make. I know so many of my picky comrades will read this and say: "Great! Now I have an official excuse - My pickiness is a disorder." But can I please encourage you to think about it for a minute. We rarely think about why we eat what we do and if you tried to determine what led you to finicky eating habits, you might begin to break free as well. As I type these words I am enjoying a bowl of homemade guacamole that I made and whole grain crackers. (Not many picky eaters will ever be able to say that, and I certainly never expected to!) </div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
I truly believe that analyzing my past and the reasons for my "Selective Eating Disorder" has helped me overcome so many fears about food. I am now DAILY trying brand new things. My cooking has become more creative and my husband has become more grateful! My life is slowly letting go of the limitations that socially, physically and mentally held me back. Every day is a brand new opportunity full of so many choices. I fear that so many picky eaters will stay just that way forever because they were never quite brave enough to make a different choice. I read once that you have to try a food at least 7 times before you can decide if you like it or not. </div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
Set goals. Read labels. Cook for yourself - That last one is important. I think if I had always had someone to cook for me all the time I would have never had the courage to add that extra spice or veggie just to see. It takes time. It takes trying. I pray for you to have the strength to <u>want</u> to change. </div>

<span style="font-family: Verdana, sans-serif;">On the right side future world, just a little past "The Seas with Nemo and Friends" hides this little restaurant. The Coral Reef is an enchanting place to sit down for a meal supplying an aquatic atmosphere of live fish swimming right next to your table. It is recommended that you make a reservation for dinner as well as check out their menu and you can do so at this link: <a href="https://disneyworld.disney.go.com/dining/epcot/coral-reef-restaurant/">https://disneyworld.disney.go.com/dining/epcot/coral-reef-restaurant/</a></span><br />

<div class="separator" style="clear: both; text-align: center;">
</div>
<span style="font-family: Verdana, sans-serif;">We dined here with a group of friends and enjoyed the atmosphere as much as the food! I preface the remainder of my post by reminding you that this blog is about me (a very picky, or shall I say finicky eater) trying new things that I would not normally try, and telling you about them in hopes that other picky eaters like myself will have more courage to introduce new cuisine to their pallets. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">Each table comes with fresh and hot homemade rolls served with butter and a pamphlet about the aquarium. Did you know that the whole ride "Mission Space" could fit inside this aquarium? </span><br />

<span style="font-family: Verdana, sans-serif;"><b>What I ordered</b>: For an appetizer I was feeling brave enough to try the Creamy Lobster Soup made with tarragon and brandy. </span><br />

<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">I can honestly say I would not order this again. While I am sure that it would be great for some, I can not handle a fishy tasting soup. The lobster was fresh, but this soup just was not for me. My friend on the other hand loved it! I am glad I tried this lobster soup so I know for future reference what I really do like and don't like. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<div class="separator" style="clear: both; text-align: center;">

<span style="font-family: Verdana, sans-serif;">For my entree I ordered the Seared Rainbow Trout. </span><br />

<tr><td class="tr-caption" style="text-align: center;">Seared Rainbow Trout</td></tr>

<span style="font-family: Verdana, sans-serif;">This was originally suppose to come with a warm salad of white beans, arugula and tomatoes. I asked for rice instead. (Don't judge...This was still new to me and I deserve points for trying that fish soup!)</span><br />
<span style="font-family: Verdana, sans-serif;">The sauce that you see in the picture is made of balsamic vinegar and brown butter, which was out of my box from the start because I really do hate vinegar. I truly loved the fish but was not a big fan of the vinegar sauce. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">My husband ordered the Grilled New York Strip Steak.</span><br />
<table cellpadding="0" cellspacing="0" class="tr-caption-container" style="float: right; margin-left: 1em; text-align: right;"><tbody>
<tr><td style="text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhpJVCw0vVQy10G1li9U4rLhDERCxRfWewWJzx-EEDYAkhpuAL6mOkZ-iw76QAEdGJFzlLCJ7eC1K_AsfqMINL3b8AGw1IsrIpYRVHTVrw9wLIy1Dj0mky8qNL-ZsBe9gXMD99OOviP-7k/s1600/IMG_2522.JPG" imageanchor="1" style="clear: right; margin-bottom: 1em; margin-left: auto; margin-right: auto;"><img border="0" height="150" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhpJVCw0vVQy10G1li9U4rLhDERCxRfWewWJzx-EEDYAkhpuAL6mOkZ-iw76QAEdGJFzlLCJ7eC1K_AsfqMINL3b8AGw1IsrIpYRVHTVrw9wLIy1Dj0mky8qNL-ZsBe9gXMD99OOviP-7k/s200/IMG_2522.JPG" width="200" /></a></td></tr>
<tr><td class="tr-caption" style="text-align: center;">Grilled New York Strip Steak</td></tr>
</tbody></table>
<span style="font-family: Verdana, sans-serif;">Warning if you order any beef: he ordered his steak medium rare and it came out cooked medium. He still found the steak delicious and also enjoyed the potato medley for his side dish. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">Our friends that accompanied us ordered the Coral Reef Lobster Orcchiette Pasta with white cheddar cheese and basil oil. They both agreed that it was fabulous and would order it again. I tried a little of it and again do not think pasta and fish should be together in one dish. I love lobster and I love pasta (more than you know) but I can not handle them together. This pasta dish does come highly recommended by more normal, less picky eaters. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">All in all we enjoyed our time here at Coral Reef and would come again. </span><br />
<span style="font-family: Verdana, sans-serif;">Enjoy! </span>Anonymoushttp://www.blogger.com/profile/04713084621395523201noreply@blogger.com0tag:blogger.com,1999:blog-8871847640115032176.post-83759307607181880502013-01-31T10:00:00.001-05:002013-01-31T10:00:32.333-05:00Basa Fish Tacos<div class="separator" style="clear: both; text-align: center;">

<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Cilantro is my new lettuce. This tasty little herb has worked its way into my heart and my palate, plus I just found out that cilantro is a natural cleansing agent with antioxidants! Check that out here: <a href="http://www.globalhealingcenter.com/natural-health/health-benefits-of-cilantro/">http://www.globalhealingcenter.com/natural-health/health-benefits-of-cilantro/</a></span></div>
<br />
<div class="separator" style="clear: both; text-align: center;">
</div>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">I purchased a frozen, individually wrapped package of Basa fish at Publix not to long ago and created this most delicious recipe using them. One package had about 6 individually wrapped fillets in it. I was delighted at how well everything came out and just had to share! This recipe is for 2 people.</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<br />
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">You will need: </span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">2-3 fillets of Basa </span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">1/2 of a very small white onion thinly diced</span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">chopped cilantro</span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Jerk seasoning</span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">olive oil</span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">corn tortillas</span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Cotija mexican style parmesan cheese (I found this in an ethnic grocery store, if you can't find it, try another white crumbly cheese but do not use regular parmesan...it is not the same thing!) </span></div>
<div style="text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjZAAAlUDP55E3A2qeXaj3OahqBFyv6EM_tmP0-424anaztsRtHe5s3YR1T9BJoTr6Ch7rAtAtZeuPIuV2Fp_wSm4eVSBe-eGvyRZYrzXyDoqmtuTSI641M_YF9408f8eKHHw4e_KQ28VQ/s1600/IMG_2493.JPG" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjZAAAlUDP55E3A2qeXaj3OahqBFyv6EM_tmP0-424anaztsRtHe5s3YR1T9BJoTr6Ch7rAtAtZeuPIuV2Fp_wSm4eVSBe-eGvyRZYrzXyDoqmtuTSI641M_YF9408f8eKHHw4e_KQ28VQ/s320/IMG_2493.JPG" width="320" /></a></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Coat your thawed Basa with Jerk seasoning. To thaw fish filets quickly, keep in their individual packages and place in hot water. They should be thawed out in about 5 minutes. </span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">I like to use a wok when I cook. Put your wok or skillet on medium heat with 2 tablespoons of olive oil. If you love a little spice like I do you can use one tablespoon of chili oil in replace of 1/2 of the olive oil. I mix the two oils in the wok. </span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">When your wok is warm, add your Basa. Cook on each side for about 3 minutes or more depending on the thickness of the fillet. When done chop your fillets into bite size pieces. </span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">While your fish is cooking start warming your tortillas. I use a crepe skillet for this but any skillet will work. Heat one tablespoon of olive oil on medium heat. Cook one tortilla at a time for about 1 minute on both sides to make it soft and warm. Do not over cook or your tortilla will be crunchy. I always have a plate with a napkin on stand by to move my warm tortilla over to. If you are trying to cut calories then you can warm your tortilla in the microwave for about 40 seconds. (This definitely does not taste as good) </span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Create your tacos and enjoy! </span></div>

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">This is my favorite Lakeland restaurant. I love to support small, family owned businesses and this perfect little European cafe captured my heart at first bite. I have been eating here for several years now and have never been disappointed with my food or experience. They do have limited seating and on a busy lunch hour you may have to wait a little bit for a table, but I promise if you ever do have to wait, it will be worth it. </div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Open from 11am-8pm Monday thru Friday, this Turkish restaurant has something for everyone's taste buds. The well prepared entrees are reasonably priced for their quality and quantity. A few of my favorites are the feta rolls that come as an appetizer, the chicken kabobs (pictured below) and the homemade baklava. I hear from friends of mine that the veggie platter is also very tasty and they make a delicious strawberry salad with a chocolate dressing made in-house.. </span></div>

<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">The one thing that I can never get over is how wonderful the brussels sprouts are! As most know, I hate all things green, but when I tried these usually disgusting veggies, I swooned. I feel like Cafe Zuppina helped me open my horizons for trying new and out of the box dishes. Since I have discovered these most delicious veggies I am no longer afraid of trying other "scary-at-first-glance" side dishes. </span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Cafe Zuppina also offers cooking classes on Monday and Wednesday nights. I have yet to join one of these classes, but when I find time, I am determined to learn how to make their brussels sprouts! All in all I think you will be very delighted with your experience here. If you have been and found something that you really enjoyed, please share! I would love to hear about it. </span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Enjoy!</span></div>

<div style="text-align: center;">
<b><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif; font-size: x-large;"><br /></span></b></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><i>This is my favorite fondue recipe. Fondue is great for trying new things and making a wonderful at home date night. </i></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><i><br /></i></span></div>
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><i>First I do recommend an electric fondue pot. I purchased mine at target for about $20. You can adjust the temperature and it is easy to clean as well. We do have to use an extension cord because the cord it comes with is quite short. </i></span></div>
<div style="text-align: center;">
<br /></div>
<div style="text-align: center;">
Ingredients: </div>
<div style="text-align: center;">
<b>5-6 cups of Chicken Stock</b> (about 1 box, sometimes I use 1 1/2 boxes)</div>
<div style="text-align: center;">
<b>1/4 cup of orange juice</b> (can be from a fresh orange, I have also used "simply orange" juice as well)</div>
<div style="text-align: center;">
<b>1/4 cup CHOPPED cilantro (</b>I did not chop it in the picture above, it would be much better chopped) </div>
<div style="text-align: center;">
<b>2 tablespoons ground cumin</b></div>
<div style="text-align: center;">
<b>2 tablespoons jerk seasoning</b></div>
<div style="text-align: center;">
<b>2 tablespoons black pepper</b></div>
<div style="text-align: center;">
<b>the juice of one fresh squeezed lime</b></div>
<div style="text-align: center;">
<b>1 tablespoon minced garlic</b></div>
<div style="text-align: center;">
if you like things a little more spicy: <b>1 teaspoon cayenne pepper</b></div>
<div style="text-align: center;">
<b><br /></b></div>
<div style="text-align: center;">
Food for cooking: (be creative and use things you like, these are just my suggestions)</div>
<div style="text-align: center;">
<b>chicken tenders chopped in bite size pieces </b></div>
<div style="text-align: center;">
<b>thin pork chops cut into bite size pieces </b></div>
<div style="text-align: center;">
<b>uncooked, de-shelled shrimp</b></div>
<div style="text-align: center;">
<b>mushrooms</b></div>
<div style="text-align: center;">
<b>new potatoes or any potato cut into bite size pieces</b></div>
<div style="text-align: center;">
<b>corn on the cob cut into 4ths</b></div>
<div style="text-align: center;">
<b><br /></b></div>
<div style="text-align: center;">
We also like to use some sauces for the meat after it is cooked. I have bought a pre made curry sauce, a spicy asian sauce and good old fashioned A-1. I serve these in tiny little dishes perfect for dipping. Be creative and find the perfect sauce for you. </div>
<div style="text-align: center;">
<br /></div>
<div style="text-align: center;">
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><i>Bring your "Stock" ingredients to a boil and then lower your heat to a simmer.</i></span></div>
</div>
<div style="text-align: center;">
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><i>Add your veggies to the pot and let them soak in the broth. Fish them out with a large spoon when you are ready to eat them. </i></span></div>
</div>
<div style="text-align: center;">
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><i>Use your fondue sticks to cook your raw meat. Never put raw meat on the same plate that you will be eating from!! Cook for 2-5 min depending on the meat and have fun. </i></span></div>
</div>
<div style="text-align: center;">
<div style="text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><i>Enjoy! </i></span></div>

<br />
<div class="separator" style="clear: both; text-align: center;">
</div>
This is my review on our recent outing to the Rose & Crown pub and dinning room in Epcot's World Showcase. Out of the many dinning trips we have had in Epcot, I would have to say our best cast member waitressing experience was here. Our waitress was not only friendly but also shared with us some of the behind the scene details about moving from England, living on Disney property and working in America for a year. The pub (which stands for "public house", did you know that?) sits next to the world showcase lagoon with an option of dining outside to enjoy the scenery.<br />
<br />
<div class="separator" style="clear: both; text-align: center;">
</div>
Your dining experience comes with a free appetizer of bread and butter after you make your selection of traditional British cuisine from the menu. I chose the all time favorite "Fish and Chips" for $17.99.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg6d54QmAI7a7aRSTc92tny-wp344cBuzMcLWsWSTASIZk-k9Bll03MQ9Z-WGKZVeXlqtYZI_a-712YFpZ1JBPim9WPw8hFVrUsLItOlnNA_cUZRtPf-FaIBld-q4YofSqm8Sg3NsniWEk/s1600/IMG_2446.JPG" imageanchor="1" style="clear: right; float: right; margin-bottom: 1em; margin-left: 1em;"><img border="0" height="150" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg6d54QmAI7a7aRSTc92tny-wp344cBuzMcLWsWSTASIZk-k9Bll03MQ9Z-WGKZVeXlqtYZI_a-712YFpZ1JBPim9WPw8hFVrUsLItOlnNA_cUZRtPf-FaIBld-q4YofSqm8Sg3NsniWEk/s200/IMG_2446.JPG" width="200" /></a></div>
This comes with one filet of beer battered and fried fish and fries. The white fish used in this dish falls into large chunks as you eat it. I found my dish very tasty! Outside you can purchase a "to-go" order of fish and chips for $8.99. This comes with 2 small filets and fries. I am not sure they use the same white fish in the outside to go kiosk as the do inside the restaurant.<br />
<br />
<span style="font-family: inherit;">My husband chose the Roasted Rack Pork with colcannon potatoes, roasted apples and whole-grain mustard jus for $21.99. </span><br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhUMe1q5cRRlWiL_ZsiWE9kF_QN44P5_aStpAJGhAcEfqcOsg5NWwYZk-TuZ4f-cqNODGC6tsiEw36jN2s95l4GDbaxEtwFV1glbIY_x6LQdhz-YnBIMyhOVPGrUkPn0-jLFxFXGxohUwQ/s1600/IMG_2447.JPG" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" height="150" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhUMe1q5cRRlWiL_ZsiWE9kF_QN44P5_aStpAJGhAcEfqcOsg5NWwYZk-TuZ4f-cqNODGC6tsiEw36jN2s95l4GDbaxEtwFV1glbIY_x6LQdhz-YnBIMyhOVPGrUkPn0-jLFxFXGxohUwQ/s200/IMG_2447.JPG" width="200" /></a></div>
<span style="font-family: inherit;">He enjoyed this but </span>especially<span style="font-family: inherit;"> liked the potatoes. </span><br />
<span style="font-family: inherit;">Our over all </span>experience<span style="font-family: inherit;"> here was very </span>pleasant<span style="font-family: inherit;">. The portions are not huge, they are just enough to leave room for desert! </span><br />
<span style="font-family: inherit;"><br /></span>
<span style="font-family: inherit;">As with all Epcot showcase </span>restaurants<span style="font-family: inherit;"> I highly suggest making a reservation before you come as some dinning rooms book out even 6 months in advance! You can make your Epcot reservations here: </span><br />

As most know, I hate all things green. Lately I have really felt the need to make sure I am getting the proper nutrients, as most picky eaters do not, and was compelled to concoct this vibrant smoothie in hopes for the best. The sight of it is scary I know, but it truly taste better than it looks and I have found a new way to get those not so tasty greens into my system.<br />
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgbqOqdA7FNDvpFv4bQCAOccGLYhdmct2wY8-b6lhlB3zpwuP1V5_qAPRRzMgj88DWHgnaXbl0lD1DnYj2lcL2TBwxaQd7ok1OShq_STyT4kKJ4NeJm1SRCC2Hn7hB7qgtz4fVP8dGUPaE/s1600/IMG_1915.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgbqOqdA7FNDvpFv4bQCAOccGLYhdmct2wY8-b6lhlB3zpwuP1V5_qAPRRzMgj88DWHgnaXbl0lD1DnYj2lcL2TBwxaQd7ok1OShq_STyT4kKJ4NeJm1SRCC2Hn7hB7qgtz4fVP8dGUPaE/s320/IMG_1915.JPG" width="320" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Neon green or not, there is no arguing the true benefits of getting your greens in each day. They are the most concentrated source of nutrition of any food. Among the many benefits these leafy greens can help with arthritis, diabetes, osteoporosis and arterial plaque. To read more about the many reasons you should make sure you are getting that leafy goodness in your body go to:<a href="http://lowcarbdiets.about.com/od/lowcarbsuperfoods/a/greensnutrition.htm">http://lowcarbdiets.about.com/od/lowcarbsuperfoods/a/greensnutrition.htm</a></div>

Or read about how leafy greens helped this doctor get out of a wheel chair and feeling 100 times better: </div>

<a href="http://www.thewahlsfoundation.com/mmm/">http://www.thewahlsfoundation.com/mmm/</a></div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Here is one version of many different combinations you can try:</div>
<div class="separator" style="clear: both; text-align: left;">
1 banana</div>
<div class="separator" style="clear: both; text-align: left;">
1 c frozen pineapple</div>
<div class="separator" style="clear: both; text-align: left;">
1 c almond milk</div>
<div class="separator" style="clear: both; text-align: left;">
2 c fresh spinach </div>
<div class="separator" style="clear: both; text-align: left;">
1 packet of stevia in the raw or one tbls of honey if you like it a little sweeter</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Blend well in a blender. If you need to drink it out of a closed container so the green does not freak you out...it is ok! Enjoy. </div>

<u>J&J Oyster Bar- <i>Restaurant Review</i></u><br />
<i><br /></i>
My family and I recently stopped by this little gem when we were looking for something to do in the middle of the day. We had just come back from our beloved grandmothers funeral and needed a place to just relax and have a little fun. J&J Oyster Bar turned out to be far more than we expected.<br />
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhXY6CAuVQKKYIWZ145WzYFv3UKVEbcIJtHU5OJHElrf9UrWTKMr2DAac13g9gRohKxL3x0lRtEQOjarXVDcLX1RLYdmiwWvNQwvPFVdr2Imga_SP0O5oF8yEPFCXThpPW12BTuNOGuap0/s1600/IMG_1855.JPG" imageanchor="1" style="clear: right; float: right; margin-bottom: 1em; margin-left: 1em;"><img border="0" height="150" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhXY6CAuVQKKYIWZ145WzYFv3UKVEbcIJtHU5OJHElrf9UrWTKMr2DAac13g9gRohKxL3x0lRtEQOjarXVDcLX1RLYdmiwWvNQwvPFVdr2Imga_SP0O5oF8yEPFCXThpPW12BTuNOGuap0/s200/IMG_1855.JPG" width="200" /></a></div>
We brought our card games and ordered appetizers and drinks for a while as we played. Some of our favorites were the fried pickles because they were dipped in catfish batter, the crab claws and the hushpuppies. The hushpuppies were just like the ones at Catfish King...If you travel much, you know what I am talking about. Perfect with the hint of jalapeño and they come with butter to dip those delectable puppy sticks in! <br />
<br />
<div class="separator" style="clear: both; text-align: center;">

As more family showed up we were delighted by our waitress who I also think might be the manager, and her magic trick talents. She entertained us and our little ones to keep the laughs rolling. Our service at J&J's was truly wonderful. Some of us ordered whole dinner plates as others filled up on numerous appetizers but we all had an amazing time and enjoyed every bite!<br />
<br />
I can highly recommend J&J Oyster bar for a fun time and it is kid friendly. For more info and a menu click here:<br />

<b><span style="font-size: large;">Easy Coconut Pouchong Tea Cupcakes</span></b></div>
<b><br /></b>
These are inspired by my most absolute favorite tea in the world: Coconut Pouchong Oolong.<br />
Make these and have a nice steamy cup of tea as you watch them bake.<br />
<b><br /></b>
<br />
<div style="text-align: center;">
You will need:</div>
<div style="text-align: center;">
<br /></div>
<div style="text-align: center;">
1 box of white cake mix (make sure it calls for water not milk)</div>
<div style="text-align: center;">
3 eggs</div>
<div style="text-align: center;">
1/3 c oil</div>
<div style="text-align: center;">
1 1/2 c water</div>
<div style="text-align: center;">
coconut pouchong oolong loose leaf tea</div>
<div style="text-align: center;">
(you can buy this at Tea Largo in Lakeside Village or online at <a href="http://www.tea-largo.com/">www.tea-largo.com</a>)</div>
<div style="text-align: center;">
caramel in a squirt bottle (made for ice cream)</div>
<div style="text-align: center;">
a bag of large marshmallows</div>
<br />
Step 1: pre heat oven at 350<br />
Step 2: boil 1 1/2 c water<br />
Step 3: steep 3 teaspoons of the tea with the water and let steep twice as long for a stronger, more potent flavor<br />

Known for it's spring rolls, this fresh and organic v<span class="Apple-style-span" style="font-family: Helvetica, Helvetica, Arial, sans-serif; font-size: 13px; line-height: 15px;">ietnamese bistro</span> is my new favorite spot at Lakeside Village. Saigon has an eclectic menu with many healthy options for those who choose to eat on the lighter side. <br />
<br />
<div class="separator" style="clear: both; text-align: center;">
</div>
We have eaten here five times in the last two months and I am proud of myself for trying so many new things. I am not one for egg rolls but it is a new tradition that we must have the crispy spring rolls for our appetizer!<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiEDUH91z2h5IdZWfQAo_V0QYEc3yATEWnoUnkg-2J22cpmH2z_ALtfVadiCSEpkIqqVJA7WFAlqvSOLL2R0okLps5hN6Bsu9PbAOwuAFhwxoccenu441TLGvbv1bVQm_ZpgOosD1zaABY/s1600/IMG_1296.JPG" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" height="150" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiEDUH91z2h5IdZWfQAo_V0QYEc3yATEWnoUnkg-2J22cpmH2z_ALtfVadiCSEpkIqqVJA7WFAlqvSOLL2R0okLps5hN6Bsu9PbAOwuAFhwxoccenu441TLGvbv1bVQm_ZpgOosD1zaABY/s200/IMG_1296.JPG" width="200" /></a></div>
<b><br /></b>
<b>Crispy Spring Rolls</b><br />
They come with a side of "fish sauce" (don't worry it is much better than it sounds) and you can add different spicy sauces to mix in if you choose. <br />
<br />
In the past I have ordered the chicken lettuce wraps and curry chicken but today I was feeling a little more adventurous and decided to try Pho soup for the first time. <br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhpfJHkZ8m1dfZudCUratTXm1bHduFtPCBvSWA2bi5_d7BT7aoXVvjY3BxbI46Sklo_g_7zEqmfT9nknqJu3suQeO7iFPoRUQiwZb3MhAtQDq8UVKTRF6OGX3DgkePLa0rcJ3gWapoe2Qc/s1600/IMG_1297.JPG" imageanchor="1" style="clear: right; float: right; margin-bottom: 1em; margin-left: 1em;"><img border="0" height="128" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhpfJHkZ8m1dfZudCUratTXm1bHduFtPCBvSWA2bi5_d7BT7aoXVvjY3BxbI46Sklo_g_7zEqmfT9nknqJu3suQeO7iFPoRUQiwZb3MhAtQDq8UVKTRF6OGX3DgkePLa0rcJ3gWapoe2Qc/s200/IMG_1297.JPG" width="200" /></a></div>
<b>Pho Soup </b><br />
I ordered this because I wanted to keep things a little lighter. I was pleasantly surprised! I ordered the soup with meatballs but there are a variety of options. (next time I will try the chicken-it is more my style) It comes with a side of bean sprouts, fresh basil, limes and jalapeños to add to your bowl. In the soup I found rice noodles, onion, cilantro, green onion, and of corse the meatballs.<br />
I especially liked the cilantro in the soup! All of the flavors blended so well, I was truly impressed. It all reminded me a of a more exotic wedding soup.<br />
<br />

Daniel ordered his favorite: <b>Rice Noodle Salad with Chicken</b><br />
The chicken in this salad reminded me a little of a fresher bourbon chicken (like what you see in the mall) It comes with rice noodles, lettuce, bean sprouts, onion and chicken with a side of fish sauce as the dressing. Again, we like to add a spicy sauce to it that comes on the table in three different varieties.<br />
<br />
All in all this is a wonderful new hot spot! Don't be afraid to get out of the box and try something new!<br />
Enjoy!Anonymoushttp://www.blogger.com/profile/04713084621395523201noreply@blogger.com2tag:blogger.com,1999:blog-8871847640115032176.post-56587599394262717492012-07-05T20:33:00.000-04:002013-06-20T22:59:21.292-04:00Banana Spice Fruit and Veggie DipAs I try to continue on in my clean eating adventure I have found that creativity is needed. This is a tasty, healthy dip that helps make those, not-so-easy to stomach, green veggies a little bit easier.<br />

<br />
What you need:<br />
1 Banana<br />
3-4 tbls milk/almond milk<br />
1tsp vanilla extract<br />
1tsp ground cinnamon<br />
1tsp ground nutmeg<br />
<br />
Blend all ingredients in your blender and serve with your fruit or veggies for a lovely appetizer or snack!<br />
(For those who are wondering, yes the celery is a major stretch for me, but the dip really does help.)<br />

I have really been struggling with this lately. I want to like them (green veggies that hold all that goodness) but I truly hate them. I was lurking in the produce section one day trying to convince myself to buy more veggies when I stumbled upon this gem. <br />
<br />
<div class="separator" style="clear: both; text-align: center;">

<b>Bolthouse Farms Green Goodness</b><br />
<b><br /></b>
It holds the nutrition of 3 3/4 serving of fruits and veggies in one bottle. Upon looking at this I was scared. It is VERY green. I took a leap of faith and brought it home hoping for the best, and I was pleasantly surprised. Green Goodness tastes quite a bit like green apples (which I can tolerate) and not at all like spinach that is mixed in with it. My husband Daniel tried this as well and enjoyed it! In fact, I came home yesterday with 2 more bottles from the grocery store and he stole one! I am happy to share my clean eating with him. ; )<br />
<br />
Each bottle varies in price but averages around $2.50-$3 if you buy it in the small serving size. They do come in bigger bottles like orange juice but I prefer the "on the go" usefulness of this size. If you are looking to add a little green to your diet I would highly recommend Green Goodness!<br />

I know I have not blogged in a while...I am planning on changing that!<br />
<br />
<b>Happy 4th of July everyone!</b><br />
<b><br /></b>
I have really been working on my "clean eating" and made this tasty treat for a nice organic lunch.<br />
<br />
You will need:<br />
3-4 fresh strawberries<br />
1/2 c blueberries<br />
1/3 red or white onion (whatever you prefer, I used red here)<br />
1/2 of one fresh lime<br />
1-2 fresh jalapeños (I used some over ripe red ones from my garden)<br />
a few sprigs of Cilantro<br />
a pinch of salt (I used margarita salt for the coarseness) and 2-3 corn tortillas<br />
<br />
Heat oven at 350 and place your tortillas on a backing sheet. Toast for about 15 min or until crispy. (Do not add oil or fry)<br />
Dice up the strawberries, onion, and jalapeños and put them in a bowl, add blueberries and pull cilantro leaves from stems and add to bowl. Squeeze your lime half over the bowl and and add salt. Mix well and spoon your salsa over your crispy tortillas for a nice healthy organic treat!<br />

1 cup heavy cream<br />
1 cup half and half<br />
1 cup sugar<br />
1/2 cup all purpose flour<br />
1 tbs vanilla<br />
<br />
on top:<br />
cinnamon sugar mix<br />
3 tbls butter cut into dots<br />
<br />
Preheat the oven to 425 degrees. Whisk together the all fist ingredients. Pour the filling into the pie shell. Sprinkle cinnamon sugar on top and place butter dots on top. Wrap the edges of your pie with foil to prevent crust burning. Carful putting pie in oven, its all liquid! Bake for 15 min, then reduce the temperature to 350 degrees and bake for 60 min. When you take it out it will still be a little liquidy, but it will set. Let cool and serve. I love this pie after it has been in the refrigerator for a while too! <b><span class="Apple-style-span" style="font-size: x-large;">The Jerk Hut in Tampa</span></b><br />
<br />
We went here on our last date night because we has a gift certificate we had bought from Restaurant.com. (If you don't know about <a href="http://www.restaurant.com/">www.restaurant.com </a>, go to their site and give your e-mail address, they will notify you when you can buy $25 gift certificates for $2 to many different restaurants. You usually have to spend $35 to use it but you are saving a lot of money.)<br />
<br />
We had the best time. It is a little far but It was so worth it. We started out with the "patties" which I would call empanadas, but that is not the Jamaican term. They are each $2 and soooooo tasty! We also really enjoyed the Jerk chicken. I will get this again when I go back. The food is very inexpensive and they have a great variety of food and beverage. The atmosphere is very lively and unexpected from the look on the outside. Go check it out!Anonymoushttp://www.blogger.com/profile/04713084621395523201noreply@blogger.com0tag:blogger.com,1999:blog-8871847640115032176.post-81981670360771683612011-09-20T21:34:00.001-04:002013-01-28T15:09:16.274-05:00TamalesThese are some of the tastiest things you will ever put in your mouth, but I must preface by saying that it is a lot of work. I encourage you to make a whole bunch of tamales, have a tamale party, freeze the rest and eat on them for a while. They will last in the freezer for up to a year.<br />
<br />
Before you start anything I suggest you make 2 days of this cooking endeavor. Day 1 is for shopping for ingredients and cooking your meat. Day 2 is for making your masa, forming tamales and cooking.<br />
<br />
Day 1: make sure you have ALL your ingredients before you get started. This list makes about 100 tamales. : )...YOU CAN DO IT!<br />
<br />
You will need:<br />
4-6 lbs of ground beef<br />
corn or veg oil (2 bottles)<br />
salt<br />
black pepper<br />
garlic powder (large size)<br />
ground cumin (large size)<br />
chili powder (large size)<br />
Paprika (large size)<br />
Cayenne pepper (reg size)<br />
chicken bullion (large)<br />
(2) 4lb bags of Corn Masa (I used MaSeCa)<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh8HEkD6amqeaczUjFNSNkXd4CP5n36QWSSTwN6Cnf4jvzFWcaYKuVHFuQvviCRrtfEBfvKiXNwF_uVMcLhNw0aPU4-jp9VfEv84KlGo7WJA6sD1J2bxDrANJ-_LfoCqoMjMv4JSvGyP9Q/s1600/IMG_1319.JPG" imageanchor="1" style="clear: right; float: right; margin-bottom: 1em; margin-left: 1em;"><img border="0" height="200" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh8HEkD6amqeaczUjFNSNkXd4CP5n36QWSSTwN6Cnf4jvzFWcaYKuVHFuQvviCRrtfEBfvKiXNwF_uVMcLhNw0aPU4-jp9VfEv84KlGo7WJA6sD1J2bxDrANJ-_LfoCqoMjMv4JSvGyP9Q/s200/IMG_1319.JPG" width="150" /></a></div>
real corn shucks (can be found in local mexican store or sometimes on ethnic isle)<br />
<br />
Have on hand to make:<br />
A large steamer (big steaming basket works too)<br />
Measuring cup<br />
tongs<br />
measuring spoons<br />
towel<br />
spatula or spreader<br />
large skillet or wok<br />
4-6 quart pot<br />
2 extra large bowls<br />
<br />
After you buy all your ingredients cook your meat.<br />
I cooked 4 lbs of ground beef in my wok. Add NO seasoning while cooking. Cook beef thoroughly but do not over cook. You want it to be chopped up like you are making tacos.<br />
In a pot heat over lowest setting:<br />
1/2 cup oil<br />
3 tablespoons garlic powder<br />
3 tablespoons ground cumin<br />
6 tablespoons chili powder<br />
1 tablespoon black pepper<br />
1 1/2 tablespoon salt<br />
<br />
You are not cooking the seasonings, you are just warming them. Mix well. Poor over cooked meat in a very large bowl and mix until seasonings are even throughout meat. This will take about 10 min. Then If you like spicy tamales, sprinkle cayenne pepper on meat and stir. Taste/add to your spicy liking.<br />
Let cool, cover with foil and refrigerate. Clean up and rest...you have a big day tomorrow!<br />
<br />
Day 2:<br />
First, soak corn shucks in a sink of warm water. It may take up to 2 hours to become soft.<br />
<br />
Start with 2lbs of your MaSeCa in a large bowl. (it comes in a 4lb bag, use half)<br />
add the following dry ingredients to the bowl:<br />
3 tablespoons paprika<br />
1 tablespoon salt<br />
2 tablespoons cumin<br />
1 tablespoon chili powder<br />
2 tablespoons garlic powder<br />
Mix spices and MaSeCa thoroughly.<br />
In a pot have 6 cups water and 6 bullion cubes or tablespoons of chicken bullion. Warm but do not boil.<br />
<br />
In the Masa Bowl:<br />
Add 2 cups oil. Stir.<br />
slowly start adding warm chicken stock. Stir and add until you have a peanut butter consistency. You will need to use your hands here to make sure you mix thoroughly, just like kneading dough. (too thick and it will be crumbly and hard to spread, but you DO NOT want it runny)<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjqWXKdTtD5KGU_hiIvko-EwUxmtSpc7t50llPZGcYgrNUO3xQ2A4A_OaYhXs6-V3LFpvBXml-pAw6IoGu_1dUwijv858wKiVipFn5oMuJpzd5NY7Hwf83ULBpeOz6inqQzPso1iX7KVqU/s1600/IMG_1314.JPG" imageanchor="1" style="clear: right; float: right; margin-bottom: 1em; margin-left: 1em;"><img border="0" height="200" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjqWXKdTtD5KGU_hiIvko-EwUxmtSpc7t50llPZGcYgrNUO3xQ2A4A_OaYhXs6-V3LFpvBXml-pAw6IoGu_1dUwijv858wKiVipFn5oMuJpzd5NY7Hwf83ULBpeOz6inqQzPso1iX7KVqU/s200/IMG_1314.JPG" width="150" /></a></div>
If you ever feel like it is hard to spread...add more chicken stock.<br />
<br />
On a towel, lay out some of your soft corn shucks to prepare tamales.<br />
Have your Masa and meat beside you with your spatula or spreader ready.<br />
Take one corn shuck and cover about 2/3 of the shuck with masa leaving 1/3 uncovered and the top uncovered. See picture: You may want to leave more of the top uncovered than what you see in the picture so that you have a nice fold when you roll.<br />
<div class="separator" style="clear: both; text-align: center;">

In your steamer load up your tamales and steam for 2 hours. Make sure you keep water in your steamer, it will run out a few times in 2 hours. Stand the tamales opening up so that nothing falls out. Serve hot and top with cheese queso, chili or any other favorite sauce.<br />
You can freeze in ziplock bags for about a year. Longer if you vacuum pack.<br />
Enjoy!<br />

I saw that I had some wonton wrappers and used those instead. It made for a tasty and interesting snack. <br />
<br />
Need:<br />
olive oil<br />
shredded cheese (whatever you like)<br />
wonton wrappers<br />
<br />
Heat a skillet on med heat coated with olive oil.<br />
When warm place on wonton wrapper down.<br />
Place a pinch of cheese in the middle, and place another wonton wrapper on top.<br />
After a few seconds flip. Toast to your liking and serve. <br />

I love brie cheese and all wrapped up in a little roll and fried makes it that more delicious!<br />

<br />
Cut the brie into small pieces, make sure you do not use the rim or outside. (it is not tasty)<br />
place small piece of cheese on wonton wrapper.<br />

Fold the 2 sides in on top of the cheese, pinching the wrapper off at the ends. Dip your fingers in the egg and seal off the ends, then roll the rest of the way and seal of that end with egg as well. While preparing these, have your oil warmed up on Medium heat. Test your oil before you fry by tearing a piece of wonton wrapper and frying it. If it browns or burns to quickly (less than 30 seconds) then turn down your heat. When your oil is ready fry your brie rolls for about 1-2 min. (don't over cook!) and flipping them while you cook them. Have your marinara sauce warmed up and ready to serve. We have been there twice and cant wait to go back. The style is Hawaiian fusion. They have plenty of sushi and seafood but also have something for everyone! We went to the location in Tampa but they have restaurants all over the states. If you ever receive gift cards for Outback, Carrabba's or bonefish...they also work at Roy's.<br />
