Barley pilaf
Need:
quick cooking barley
2/3 c vegetable broth (for candida friendly make sure it does not have sugar in it)
1 tbsp olive oil
1/4 c thinly sliced carrots
1/4 c thinly sliced celery or okra (you choose, they are both good)
1 tbs garlic, minced
1-2 tbs soy sauce
In a small saucepan bring broth to a boil. Stir in Barley and reduce heat. Cover and simmer for 8-10 min (or until broth is almost all soaked up and barley is tender) In a large skillet or wok cook carrots, celery and garlic over med-high heat for 2-3 min. Add barley and soy sauce. Continue cooking until heated through.

Looks very interesting, Amber. I might try this if I could snag some barley haha. P.S. I'm making French Onion soup today. Will let you know how it turned out!
