Dreamy Chocolate Rice Cakes

 Dreamy Chocolate Rice Cakes


Sounds too good to be true? It's not. This little treat was invented while on a candida detox and it turned out to be the perfect snack to curve those chocolate cravings.  

What you need:
brown rice cakes (I used the Lundburg brand)
1 scoop of M'lis chocolate instant meal 
2 teaspoons almond milk
1 teaspoon vanilla extract

Mix the instant meal, almond milk and vanilla in a small bowl until it turns into a creamy paste. Spread onto your rice cake and enjoy!

Banana Spice Fruit and Veggie Dip

As I try to continue on in my clean eating adventure I have found that creativity is needed.  This is a tasty, healthy dip that helps make those, not-so-easy to stomach, green veggies a little bit easier.

What you need:
1 Banana
3-4 tbls milk/almond milk
1tsp vanilla extract
1tsp ground cinnamon
1tsp ground nutmeg

Blend all ingredients in your blender and serve with your fruit or veggies for a lovely appetizer or snack!
(For those who are wondering, yes the celery is a major stretch for me, but the dip really does help.)

Healthy Red, White and Blue Tostadas

I know I have not blogged in a while...I am planning on changing that!

Happy 4th of July everyone!

I have really been working on my "clean eating" and made this tasty treat for a nice organic lunch.

You will need:
3-4 fresh strawberries
1/2 c blueberries
1/3 red or white onion (whatever you prefer, I used red here)
1/2 of one fresh lime
1-2 fresh jalapeƱos (I used some over ripe red ones from my garden)
a few sprigs of Cilantro
a pinch of salt (I used margarita salt for the coarseness) and 2-3 corn tortillas

Heat oven at 350 and place your tortillas on a backing sheet.  Toast for about 15 min or until crispy. (Do not add oil or fry)
Dice up the strawberries, onion, and jalapeƱos and put them in a bowl, add blueberries and pull cilantro leaves from stems and add to bowl.  Squeeze your lime half over the bowl and and add salt.  Mix well and spoon your salsa over your crispy tortillas for a nice healthy organic treat!

mini quesadillas

I ran out of tortillas tonight when I wanted to make a quesadilla. I saw that I had some wonton wrappers and used those instead. It made for a tasty and interesting snack.

Need:
olive oil
shredded cheese (whatever you like)
wonton wrappers

Heat a skillet on med heat coated with olive oil.
When warm place on wonton wrapper down.
Place a pinch of cheese in the middle, and place another wonton wrapper on top.
After a few seconds flip. Toast to your liking and serve.
Enjoy!

Roasted pumpkin seed recipes

I am making these tonight.  We had a youth activity with pumpkins and I have pumpkin seeds left from about 6 pumpkins, so I thought I would experiment.

First: wash your pumpkin seeds with water in a strainer and and lay them out on a pillow case. (this is less sticky than a towel) Let them dry overnight

Set your oven to 275 degrees
directions for all pumpkin seeds: roast for 30 min and stir. Roast for another 30 min, take them out and place them on a paper or serving plate to cool. (if using butter they will come out a little brown, but that is ok)

Healthy cajun 

cover your pumpkin seeds in a little olive oil.
sprinkle: garlic powder, sea salt, cracked black pepper, cayenne pepper
stir and put in oven

Healthy Salty


cover your pumpkin seeds in a bit of "heart of gold" oil (found at wholefoodfarmacy.com)
or olive oil.
Sprinkle: Stardust (found at wholefoodfarmacy.com) or sea salt
stir and put in oven

Buttery Cinnamon 


Melt 1/2 stick of real butter or 4 tbls in a pot on stove or microwave in 45 sec increments.
Poor butter over pumpkin seeds.
Sprinkle: Cinnamon and sugar
stir and put in oven

Garlic Buttery Goodness


Melt 1/2  stick of real butter or 4 tbls in a pot on stove or microwave in 45 sec increments.
Poor butter over pumpkin seeds.
Sprinkle: Worshire sauce, garlic, cracked black pepper, sea salt.

Whole Foods Faramacy

Ok so for all of you who are open to trying new things and really want to start eating better snacks I highly recommend this site! Wholefoodsfarmacy.com

When I went to camp this year I was worried because everyday on "site" for lunch they serve sandwiches. Being the picky eater that I am...I don't eat sandwiches and know I had to have a plan.  I went to this website and ordered a sample pack of their "phi" and I was shipped 20 different snack size foods.  The Phi is a cookie dough consistency of different fruits and veggies and and other goodness that is all natural and good for you. Needless to say, I ate one sample pack for lunch a day and was completely content! Perfect meal supplement for me and I am getting nutrients that I don't normally in my very strange diet.
I highly recommend the Phi plus or the coco cherry phi.   Next order I am going to try the "fruitalicious"

Sweaza Salsa

Description: So here it is, my favorite recipe that has been past down and tweaked to perfection (of my liking). If you are trying to like vegetables, salsa is a great place to start. I hate tomatoes, but I love a good salsa!

Need: 1 lime, 1 can hunts fire roasted tomatoes (diced), 1/4 a red onion, 1 tablespoon garlic (minced), fresh cilantro, 1-2 jalapenos,  salt and pepper.   Favorite chips to serve.

on a cutting board dice your red onion, jalapeno (start with 1 and if you need more kick add the other)
In a blender poor in your fire roasted tomatoes first, then add your onion and jalapeno. with a knife slice off about half of your leaves from a small bushel of cilantro and add to blender. then add garlic, salt , pepper and squeeze on half of your lime into the blender.  Blend well and taste test to make sure it has the kick that you are looking for.  If it is too hot, add another 1/2 can of tomatoes, and if it is to mild at another jalapeno. For a serious kick I have used one habanero pepper before.  Serve with your favorite chips. (I prefer blue and yellow corn)  Enjoy!

Strawberry and Peanut butter wraps

Description: If you like peanut butter but you don't like jelly on your sandwiches, try this! Also if you are trying to eat more wheat but you really prefer white bread, this recipe may help.

Need: Crunchy Peanut butter, 4 fresh strawberries, 1 wheat wrap (or large tortilla)

First cover your wrap with peanut butter, then slice your fresh strawberries into chunks. Spread your strawberries around your wrap and then roll it all together nice and tight.  To serve, use a sharp knife and slice diagonally your wrap into fourths and enjoy!

This is a fast and easy lunch that is healthy and great for getting your protein and fruits in for the day!
