As I try to continue on in my clean eating adventure I have found that creativity is needed. This is a tasty, healthy dip that helps make those, not-so-easy to stomach, green veggies a little bit easier.
What you need:
1 Banana
3-4 tbls milk/almond milk
1tsp vanilla extract
1tsp ground cinnamon
1tsp ground nutmeg
Blend all ingredients in your blender and serve with your fruit or veggies for a lovely appetizer or snack!
(For those who are wondering, yes the celery is a major stretch for me, but the dip really does help.)

Green Goodness Product Review
For those who know me, you know I hate all things green. I have really been struggling with this lately. I want to like them (green veggies that hold all that goodness) but I truly hate them. I was lurking in the produce section one day trying to convince myself to buy more veggies when I stumbled upon this gem.
Bolthouse Farms Green Goodness
It holds the nutrition of 3 3/4 serving of fruits and veggies in one bottle. Upon looking at this I was scared. It is VERY green. I took a leap of faith and brought it home hoping for the best, and I was pleasantly surprised. Green Goodness tastes quite a bit like green apples (which I can tolerate) and not at all like spinach that is mixed in with it. My husband Daniel tried this as well and enjoyed it! In fact, I came home yesterday with 2 more bottles from the grocery store and he stole one! I am happy to share my clean eating with him. ; )
Each bottle varies in price but averages around $2.50-$3 if you buy it in the small serving size. They do come in bigger bottles like orange juice but I prefer the "on the go" usefulness of this size. If you are looking to add a little green to your diet I would highly recommend Green Goodness!

Healthy Red, White and Blue Tostadas
I know I have not blogged in a while...I am planning on changing that!
Happy 4th of July everyone!
I have really been working on my "clean eating" and made this tasty treat for a nice organic lunch.
You will need:
3-4 fresh strawberries
1/2 c blueberries
1/3 red or white onion (whatever you prefer, I used red here)
1/2 of one fresh lime
1-2 fresh jalapeƱos (I used some over ripe red ones from my garden)
a few sprigs of Cilantro
a pinch of salt (I used margarita salt for the coarseness) and 2-3 corn tortillas
Heat oven at 350 and place your tortillas on a backing sheet. Toast for about 15 min or until crispy. (Do not add oil or fry)
Dice up the strawberries, onion, and jalapeƱos and put them in a bowl, add blueberries and pull cilantro leaves from stems and add to bowl. Squeeze your lime half over the bowl and and add salt. Mix well and spoon your salsa over your crispy tortillas for a nice healthy organic treat!

Chex cereal crusted mahi
Chop or crush 2 cups of your favorite hex cereal. I used corn chex.
In a bowl: 2 c chex cereal crushed
1 tbls cayenne pepper
2 packets of stevia
With your thawed mahi fish, wash in cold water, pat dry with paper towel and coat with agave nectar or honey. Then coat in chex mixture.
Have your oven ready at 400 degrees and your baking pan coated with oil. ( I used Hokan Chili Oil)
Bake for about 20 min depending on how big your fillets. Fish is done when white and flakey.
Serve with orange salsa (previous post) and enjoy!

Orange salsa
There are no oranges in the is "orange" salsa! This is a perfect topping for your grilled or baked fish or chicken.
1/2 c frozen mango chunks
1/4 c baby carrots
1/2 c white onion

Amber's special seasoning
This is a perfect, light seasoning for the spicy food lover. I put it on everything! Use and old spice container and mix the following:
1 part cayenne pepper
1 part garlic powder
1 part ground black pepper
1 part cayenne pepper

Barley pilaf
Need:
quick cooking barley
2/3 c vegetable broth (for candida friendly make sure it does not have sugar in it)
1 tbsp olive oil
1/4 c thinly sliced carrots
1/4 c thinly sliced celery or okra (you choose, they are both good)
1 tbs garlic, minced
1-2 tbs soy sauce
In a small saucepan bring broth to a boil. Stir in Barley and reduce heat. Cover and simmer for 8-10 min (or until broth is almost all soaked up and barley is tender) In a large skillet or wok cook carrots, celery and garlic over med-high heat for 2-3 min. Add barley and soy sauce. Continue cooking until heated through.
Enjoy!
Perfect Salad with fruit
This is the first salad I have actually enjoyed! It's mind over matter picky eaters. Did you know that it takes trying something you don't normally eat or like 7 times before you start to like it? Don't turn your nose up unless you have tried eating a salad in the last few months more than once!
Need:
Romaine lettuce blend (I like it pre-packaged so I don't have to cut anything)
5 strawberries
5 slices of red apple
bukey ball matrix from: Wholefoodfarmacy.com or:
honey roasted peanuts (but not as healthy)
wash lettuce and strawberries. In bowl leave lettuce kind of still wet (we aren't using salad dressing, trust me you don't need it!) Slice strawberries into 1/3s. Slice apple slices into bits. Add to lettuce and top with Bukey ball matrix.
Enjoy!

zucchini hash browns
Every picky eater likes potatoes, (maybe in just french fry form) but we like them. Today I came up with a way to eat more vegetables and make myself believe I was just eating potatoes!

6-8 red potatoes
1/4 white onion
olive oil
1 zucchini
cayenne pepper
garlic
sea salt
First, wash all vegetables. Then, in a skillet heat a tbls of olive oil over medium heat. slice your onion into small pieces and brown your onion bits. While they are browning slice your potatoes into small bits. In a microwave safe bowl (preferably with a lid) microwave potato bits and a little water in the bottom of the bowl for 5-6 min. You want them "al dente" to almost smooshy! While in the microwave slice zucchini into bits. Drain your potatoes and add potatoes and zucchini to the skillet. My first likable salad
So I know what you are thinking....if you are as picky as I am. "What in the world are you doing eating a salad!" I know, I know, but I am really trying to like new things and I wanted to share my experience with you. This is also a lunch meal from my "alkaline only" food plan. I say this was my first likable salad but it was still a stretch for me and by no means to I crave salad yet. I am just trying to branch out.
Need: Romaine lettuce
veggie spice (freeze dried vegetables from wholefood farmacy.com)
Heart of Gold oil from wholefood farmacy.com or your favorite olive oil.
First wash your lettuce and slice it up into small edible bites. Then place it into a bowl and poor a serving of veggie spice (great substitution for croutons) on top. Lastly drizzle your oil as your dressing on top and enjoy!

Brown rice pasta and fresh strawberries
So for my alkaline only lunches I have been trying new things. Here is a new creation I came up with today.
Need: fresh strawberries
brown rice (gluten free) pasta - found in your green wise or health food section
1/4 c olive oil
1 tbs garlic minced
green onions
1 tomato chopped into pieces
sea salt, cayenne pepper to taste
First boil water and cook your pasta. It may take longer than normal because this pasta has a thicker more chewy consistency. In a wok or skillet heat oil, garlic, and tomatoes. When pasta is done (taste it first!) drain well and rinse with cold water. Add pasta and green onion to wok. Cook for about 1- 1 1/2 minutes. Add salt and cayenne pepper to taste.
On your plate place cold strawberries and pasta, and enjoy!
Adding Alkaline to your diet
So for all my picky eater friends out there, I have jumped the boat! I have decided after researching for many months to add more alkaline to my every day diet. If you don't know what that means I will show you, but first I wanted to explain what made me want to change so drastically.
I have wanted to start eating more healthy for a while, and I learned some important things about how alkaline in your system can help and too much acid can create a disease environment inside your body.
but I first heard about alkaline changing and helping your health at a women's meeting i sang at almost a year ago. There was a lady there who had had cancer and she began to tell us that her whole life was changed when she started drinking "Kangan water" (note: this is not a plug for selling water purifiers) She showed us how much acid was in the normal things we drink every day: tap water, soda, dasanni water, aquafina water. She used a dropper test and when she put the liquid into the water/soda it would turn either yellow,orange or bluish green. The more blue the more alkaline in your body. I was shocked to learn that everything I was drinking was mostly acid forming.
Now after more research and talking with fellow massage therapist/ health nuts, I am adding more alkaline to my diet in this manner: For Breakfast and Lunch I only eat alkaline forming foods and for dinner I eat whatever I want. I have bought test strips to test the PH of my body from a local health food store and I plan on making this a lifestyle change, not a diet.

Human blood pH should be slightly alkaline ( 7.35 - 7.45 ). Below or above this range means symptoms and disease. A pH of 7.0 is neutral. A pH below 7.0 is acidic. A pH above 7.0 is alkaline.
An acidic pH can occur from, an acid forming diet, emotional stress, toxic overload, and/or immune reactions or any process that deprives the cells of oxygen and other nutrients. The body will try to compensate for acidic pH by using alkaline minerals. If the diet does not contain enough minerals to compensate, a build up of acids in the cells will occur.
An acidic balance will: decrease the body's ability to absorb minerals and other nutrients, decrease the energy production in the cells, decrease it's ability to repair damaged cells, decrease it's ability to detoxify heavy metals, make tumor cells thrive, and make it more susceptible to fatigue and illness. A blood pH of 6.9, which is only slightly acidic, can induce coma and death.
The reason acidosis is more common in our society is mostly due to the typical American diet, which is far too high in acid producing animal products like meat, eggs and dairy, and far too low in alkaline producing foods like fresh vegetables. Additionally, we eat acid producing processed foods like white flour and sugar and drink acid producing beverages like coffee and soft drinks. We use too many drugs, which are acid forming; and we use artificial chemical sweeteners like NutraSweet, Spoonful, Sweet 'N Low, Equal, or Aspartame, which are poison and extremely acid forming. One of the best things we can do to correct an overly acid body is to clean up the diet and lifestyle.
To maintain health, the diet should consist of 60% alkaline forming foods and 40% acid forming foods. To restore health, the diet should consist of 80% alkaline forming foods and 20% acid forming foods.
Generally, alkaline forming foods include: most fruits, green vegetables, peas, beans, lentils, spices, herbs and seasonings, and seeds and nuts.

Strawberry and Peanut butter wraps
Description: If you like peanut butter but you don't like jelly on your sandwiches, try this! Also if you are trying to eat more wheat but you really prefer white bread, this recipe may help.
Need: Crunchy Peanut butter, 4 fresh strawberries, 1 wheat wrap (or large tortilla)
First cover your wrap with peanut butter, then slice your fresh strawberries into chunks. Spread your strawberries around your wrap and then roll it all together nice and tight. To serve, use a sharp knife and slice diagonally your wrap into fourths and enjoy!
This is a fast and easy lunch that is healthy and great for getting your protein and fruits in for the day!
