Chex cereal crusted mahi

Chop or crush 2 cups of your favorite hex cereal. I used corn chex.

In a bowl: 2 c chex cereal crushed
1 tbls cayenne pepper
2 packets of stevia

With your thawed mahi fish, wash in cold water, pat dry with paper towel and coat with agave nectar or honey. Then coat in chex mixture.

Have your oven ready at 400 degrees and your baking pan coated with oil. ( I used Hokan Chili Oil)

Bake for about 20 min depending on how big your fillets. Fish is done when white and flakey.
Serve with orange salsa (previous post) and enjoy!
