zucchini hash browns

Every picky eater likes potatoes, (maybe in just french fry form) but we like them.  Today I came up with a way to eat more vegetables and make myself believe I was just eating potatoes!


you need:
to serve 2-3

6-8 red potatoes
1/4 white onion
olive oil
1 zucchini
cayenne pepper
garlic
sea salt


First, wash all vegetables. Then,  in a skillet heat a tbls of olive oil over medium heat. slice your onion into small pieces and brown your onion bits. While they are browning slice your potatoes into small bits. In a microwave safe bowl (preferably with a lid) microwave potato bits and a little water in the bottom of the bowl for 5-6 min.  You want them "al dente" to almost smooshy!  While in the microwave slice zucchini into bits. Drain your potatoes and add potatoes and zucchini to the skillet.  Add a little olive oil if they are starting to stick to the pan. Poor special seasoning  and cook for about 5 min.

Serve and enjoy!

P.S. My husband hates Zucchini but loved this!
